Black pepper comes from a climbing vine, the fruits of which small round berries ripen from green to red and finally to brown. Black peppercorns are actually berries that are picked when theyre just turning red. They are then dried whole before being sold.
White pepper starts out the same as the black, but are allowed to ripen more fully on the vine. The outer shell is then removed by soaking the berries in water until the shell falls off, or are held under flowing spring water, yielding a whiter, cleaner pepper.
Currently the Tellicherry pepper is the most popular. It is named after the port and region it is gathered from. It is the oldest source of black pepper, though Alleppey and Pandjung are also long time ports for the export of this spice. The Tellicherry peppercorn is larger and darker than others. It has a more complex flavor which is why it is more popular.
