1. KNEADING Raw materials are mixed in the desired proportion in the kneader. The kneader ensures good mixing of the ingredients and forms a dough. The texture and composition of the dough depends on the mix of the raw materials used.

2. EXTRUDING The dough is fed to the extruder hopper. A screw from the bottom of the hopper conveys the dough to the extruder head.

The extruder head can be fitted with a mesh of desired hole size and shape. Thismesh determines the size and shape of the end fried product. The dough isextruded from the extruder in the desired shape into the fryer.

3. FRYING The output from the extruder is fed to the fryer. The fryer consists of a longvessel in which a conveyor is placed to convey the product. The vessel has hotoil in which the product is fried. The hot oil is filtered and circulated in thesystem. An edible oil heater heats the oil up to the desired frying temperature.The edible oil heater is a direct fired unit with the burner operating on diesel asfuel. The oil circulation pump and the burner operate to maintain thetemperature of the oil at the set frying temperature. The burner is automaticand works ON OFF based on the input of the temperature indicator andcontroller.The product fed from the extruder to the fryer travels through the bed of hot oiland is cooked and discharged from the other end. The cooking/frying time andthe temperature are variable and can be set according to the product being fried.Thus the product quality as desired can be obtained.The system has a used oil storage tank with a cooling water jacket. The hot oilleft in the system after the production cycle can be pumped into the tank. Withthe cooling water circuit on the hot oil is cooled for overnight storage. This oil isused as make up oil during the next days production cycle. An automatic levelmake up system ensures that the oil level in the frying vessel is maintained tothe desired point. This ensures the consistency and the quality of the friedproduct.


The complete system contact parts are in stainless steel SS 304 exceptingstandard components like bearings, housings, etc. all standard components likemotors, switchgear, controllers, bearings, etc. ensure that the system operatessmoothly and there is easy availability of spares. A control panel with starters and controllers is provided for the smoothoperation and control of the plant.

Direct Fired

Direct heated frying systemsIn direct heated frying systems the edible oil is heated directly by burning fuel. In this system the combustion of fuel generates a temperature in the range of 800 deg C to 1000 deg C. This temperature and hot flue gases heat up the edible oil to a temperature of up to 200 deg C for frying needs.
Direct heated frying systems come in two models viz. COMPACT and DIRECT.

Compact model in the compact series of frying systems the heating unit is integral with the frying system.

This means the fuel is burned directly in the frying system.

This is either achieved by using an external refractory lined furnace or by immersed heating tubes.

Direct model the direct model has an External and Efficient Edible Oil Heating system.In the DIRECT series of frying systems the heating unit is external or separate from the frying system.

This means that the fuel is burnt in a separate unit which is placed away from the frying unit. It can also be placed in another room.

The efficiency of the system is high due to the external heating system, the fuel consumption is optimum due to the automatic operation of the burner.

Indirect Fired

Indirect heated frying systems : TristarIn Indirect heated frying systems the edible oil is heated indirectly by thermic fluid or steam. Burning fuel generates hot thermic fluid or steam.
In this system the combustion of fuel generates a temperature in the range of 800 deg C to 1000 deg C. This temperature and hot flue gases heat up thermic fluid or water to generate steam as the heating source for the edible oil.

The maximum temperature of thermic fluid or steam is 300 deg C that is used to heat the edible oil to a temperature of up to 200 deg C for frying needs.

Here the temperature gradient between the heating media and the heated media is low, the oil film temperatures are low and hence the rate of deterioration of oil is low.

In the TRISTAR series of frying systems a heat exchanger is provided to transfer the heat from the heating media to the edible oil.

The heating unit is external or separate from the frying system. This means that the fuel is burnt in a separate unit, which is placed in another room.

Gas Fired Thermic Fluid Heaters

At high temperature, water and steam requires a corresponding high operating pressure. Establishing this with water and steam can be very controversial and expensive. In thermic fluid heaters a special oil is used instead as the heat carrier, operating at atmospheric pressure up to 300C. Compared to water and steam, it would require a pressure of 85 bar to obtain this temperature. There are several advantages of using thermic fluid heaters compared to steam boilers.

The most obvious are :

  • High temperature upto 300C at atmospheric pressure.
  • No equipment for pre-treatment of boiler feed water.
  • No heat loss due to hot condensate and flash steam.
  • No risk of corrosion.
  • Low maintenance costs.
  • Easy to operate ( does not require a steam boiler certified operator).
