Sorbitol, a polyol (sugar alcohol), is a bulk sweetener found in numerous food products. In addition to providing sweetness, it is an excellent humectant and texturizing agent. Sorbitol is used to relieve occasional constipation and irregularity. Sorbitol generally produces bowel movement in 1/4 to 1 hour when used rectally.Sorbitol is also used as a pharmaceutical aide (sweetener) Sorbitol is used as an additive in the food, cosmetics, pharmaceutical, paper and leather industries. It is also a raw material for various chemicals such as vitamin C, surfactants and resins.
sorbitol or Sorbitol 70% as it is more widely known, is a polyol belonging to the group of linear hexitols.Chemically it is a Hexahydic Alcohol with a molecular weight of 182.2.Its empirical formula is C6H14O6. Sorbitol is available in abudance in most of the fruits like Black Grapes, Apples, Plums, Cherries, PearsRowan with D-Sorbitol content ranging between 0.5%to 10%.Despite this, sorbitol is manufactured synthetically by hydrogenation of Glucose Syrup in the presence of Raney Nickel Catalyst.1Sorbitol is a Lyophilic, non toxic, non irritant, stable and chemically inert, resistant to heat, resistant toacids and is non fermentable by many micro organisms.2Sorbitol can be esterified and etherified to yield derivatives which can be used in many applications like Foods, Cosmetics, Textiles, Synthesis of Rigid Polyurethane Foams.3Reaction of Sorbitol with acid catalyst at high temperatures yields cyclic ethers with Aldehydes and Ketones yields Acetals.4Sorbitol is highly hygroscopic which works as an excellent stabilizer in foods.5Sorbitol has excellent plasticizing properties and compared to other polyols, it gives the product good consistency and a high level of elasticity.6In Alkaline media Sorbitol has good Chelating properties in the presence of certain metal ions.7Sorbitol whwn used with other sugars enhances the sweetness synergistically and it also masks the bitter after taste of some intense sweeteners, such as Saccharin.8Sorbitol does not cause the substances added by it to turn brown when heated.9Slow absorption of Sorbitol in the body fluids as compared to other sugars makes it an ideal diet substitute for higher sugars.11Sorbitol solubility is in direct proportion to its viscosity at higher temperatures.This leads to excellent coating applications.11Sorbitol protects fibres from denaturation during freezing.Sorbitol lowers freezing point more than higher sugars prevents enzyme from inactivation.All these makes Sorbitol a very good cryoprotective agent in the Refrigeration Industry.
