Asafetida is a dried, resinous gum obtained from the stem and rhizomes of three species of the Ferula (giant fenne) plant. Although available in 'tears' and 'lumps', it is most commonly found in powdered form. Asafetida has a very strong, pungent smell and the flavor mellows as it is fried in oil. When cooked, it has a truffle- like flavor and a roasted garlic aroma.
Cinnamon is the inner bark of a tropical evergreen tree from the laurel family. Cinnamon has a worm, sweet and amiable aroma that is delicate yet intense. Indonesia and china are the chief source of cinnamon. In India it is mostly grown in Kerala. It is used to flavor coffee and chocolate drinks. It is also widely used in Indian cuisine and to flavor rice and desserts.
Cumin is the dried, white fruit with grayish brown color of a small slender annual herb. It is now mostly produced in India.Gujrat, Rajasthan and Uttar Pradesh are the prominent producers. Cumin seed have an aromatic odour and bitter taste. It is used as a condiment, and is an ingredient in Curry powder, seasonings of breads, Cakes and Cheese. It's oil is also used in perfumery and for flavoring liqueurs, and cordials.
Curry leaves come from the plant of India origin Murraya Koenigii that grows wild in the Himalayas foothills as well as many other parts of India. They feature in dishes from saags in Gujrat to the fish curries of Kerala. Curry leaves are vital in Chennai, the sole region in which they form the basis of most masalas
Fenugreek seed is the ripe fruit of an annual herb. This robust herb has light green leaves. Major producers are Rajasthan, Gujrat, Uttar Pradesh & Tamil Nadu. Fenugreek is used both as a food additive as well as in medicine. As a spice it flavors food. Powder of dried leaves is also used for garnishing variety of food.
