we are offering black onion seed. These seeds are taken from the nigella flower. They are small, matt black grains with a rough surface and an oily white interior.
It is not a very common spice these days and it's role in the world spice trade is limited. It's usage is almost confined to Central Asia and Northern India, especially in Punjab and Gujrat. Seeds are small, ribbed ovoid, grayish-green to purple-red in color that are very small. The taste is largely determined by Thymon in the Essential oil and is hot and bitter. In India ajwain is popular for it's use in breads (paratha), Pakora, Fried Snacks and an enhancement to spice mixes.
Fennel Seeds are sweet in flavor and an odour similar to aniseed. It is cooling spice. It thrives in the sunny, limey well-drained loams of Gujrat, Rajasthan and Utar Pradesh. Fennel seed has a slight menthol undertone with musty flavor notes. Widely used in India after a meal as a breath freshener and a digestive aid.
Mustard has a pungent, biting flavor and it is a warming spice. In India Mustard is cultivated in Rajasthan, Gujrat, Uttar Pradesh & Madhya Pradesh. Mustard enhanced the taste of meat, fish, poultry, salad dressing and egg dishes.
