amino acid (l-glutamic acid). it is a white crystalline substance
soluble in water and alcohol; practically odorless. msg is used to
intensify flavours of foods. it is produced by a bacterial
fermentation process with starch or molasses as carbon sources and
ammonium salts as nitrogen sources (steffen process).
