The most popular choice for egg consumption are chicken eggs Eggs contain multiple proteins which gel at different temperatures within the yolk and the white, and the temperature determines the gelling time. Egg yolk begins to gelify, or solidify, when it reaches temperatures between about 60 and 70oC (140 and 158oF).
