Additional Information : The production of tea requires great care and craftsmanship. The freshly plucked leaves are carefully and gently processed every step of the way. This is labor intensive, time consuming and, as a result, expensive, but this is the only way that all the delicacy of the aroma and the typical character of the tea plant can be passed on to the finished tea. It is tea that has been fully oxidized or fermented and yields a hearty flavored amber brew. In Indian Major Tea origins were Assam, Darjeeling, Dooars and Terai Teas, Nilgiri and Munnar Tea. There are three different types of teas produced- Green Tea, Oolong Tea & Black Tea.
Classification of Tea :

• Green Tea - Green tea is nothing more than the leaves of the camellia sinensis have been processed a certain way. Green tea skips the oxidizing step. It has more delicate taste and is light green or golden in colors. They are also lower in caffeine and have higher antioxidant properties.
• Oolong Tea - The best way to describe oolong tea is that they are somewhere in between green and black tea. This is because they are only partially oxidized during the processing.
• Black Tea - Black teas are the most consumed of teas and accounts for 83% of the world tea trade. They are the highest in caffeine. Black tea is the most popular tea in the world. It is the tea most widely used in making iced tea and English tea. There are two varieties of Black Teas. The Traditional Orthodox (leaf) Tea It accounts for 44% of the world market The Modern process of CTC (granular) Tea It accoun5ts for 39% of the world market. Orthodox Teas were blackish / brownish in appearance and comprise of four main categories: Whole Leaf Tea, Broken Tea, Fanning and Dust.
• Whole Leaf: Long and Wiry, Grade name FTGFOP (Fine Tippy Golden Flowery Orange Pekoe) TGFOP, GFOP, FOP in decreasing order of quality and fineness in leaf appearance.
• Broken - Meaning what it says i.e., smaller in size, Grade name TGBOP (Tippy Golden Broken Orange Pekoe) Or FBOP, BOP in decreasing order of quality.
• Fannings - Still smaller and lighter particles than Broken, Grade name GOF (Golden Orange Fannings) or FOF, OF, in decreasing order of quality.
• Dust - The smallest particles-powder. Grade name PD (Pekoe Dust). In the cup, Orthodox Teas are generally bright and brisk. The whole leaf grades are lighter than the broken. In fact, the smaller the leaf particle, the more Colour & body it infuses.
• CTC Teas - These teas are blackish / brown and the Crush, Tear and Curl (CTC) process of manufacture makes the teas granular. They comprise of 3 main grades viz. Broken, Fannings and Dust. CTC brews quickly and makes a full bodied gustier cup than Orthodox Tea with almost double cup page.
