Tamarind Kernel Seeds are very hard and strong and is covered with black brown husk. It is obtained after roasting of Black brown seed and removing its outer layer. It is white in color and its size varies in between 12 to 16 mm. It is fruit of a large tropical tree grown in forests. Tamarind seed husk constitutes to 35 % of total seed weight and other 65% is white kernel used in manufacturing Tamarind kernel powder. Tamarind seed (Tamarind indicia) is found mostly in south India and South east Asia. Tree flowers in springs (Sept to Nov). The ripen from Feb to May. The seed have pulp and outer shell. Seeds are flat and irregular rectangular in shapes. The when cleaned gives 25% Testa and 75% Kernel. The black seeds are roasted and decorticated and white kernel are handpicked or separated by color sorter.
