Hence the tamarind kernel powder is 300% more efficient than corn starch.

Tamarind kernel Powder is one of the natural hydrocolloid source containing natural gums and starch ,and Viscosity is the main parameter to assess the quality of natural gums like tamarind kernel powder. The applications of any natural gums are dependent on its viscosity and other rheological properties i.e. directly linked to procurement of raw material and roasting methods used in separation of tamarind kernels from Testa (shell) because over roasting tamarind kernels will decrease gum concentration (gel strength) and starch levels as well as the viscosity solution hence It is summarized that the viscosity of powder solution also depends on gum concentration and roasting methods.
