PRODUCT DESCRIPTION-
Green jalapeno slices are produced of fresh, mature and sound raw-material.
Jalapenos will be harvested before complete ripening, before they turn into typical red colour. The fruits shall
be sorted by size and properly washed. Before cutting into slices, all stalks will be removed. The
jalapenos will be mild pickled sour. Preservation will be done by heat treatment.

50% Green Jalapeno slices, 36% water, 12% alcohol vinegar, 2 % salt;
Firming Agent (E509)

Colour: Normal colour, characteristic green to dark green, no yellow, red and/or orange
Flavour: Normal flavour and odour, characteristic sour
Texture: Product is firm to the bite, not hard, not mushy nor woody
Defect Characteristics
Thickness 5 to 5.5 cm +/- tolerance max. 10% in total by drained weight
Diameter 15 to 30 mm +/- tolerance max. 10% in total by drained weight
Caps, ends, stems and cap stems max 10 % by weight
Off-colour and black spots max. 5 % by drained weight
Kernels/seeds, core material in slices 18 – 22 % by drained weight
Kernels/seeds in brine < 1 % by drained weight

Microbiological Properties
The product is microbiologically stable and due to given premises free of augmentable germs.
