Untoasted Soy Protein is processed from dehulled defatted soybean using minimal heat treatment. The protein retains its original structure and high lipoxygenase activity.
The untoasted soy protein has high water absorptionretention, fat repulsion abilities. The characteristics make it suitable ingredient for dough conditioning in bakery applications & fortification of cereals. The untoasted soy protein can also be further heat treated through extrusion to make soya nuggets, texturized vegetable protein, and dal (pulse) analogue.
