Tamarind Seed is thoroughly cleaned & tamarind pulp fiber & dust is removed. Cleaned Seed is then roasted at controlled temperature in Automatic Roasting plant. Care is to be taken that the kernel is not charred during heating. The testae are then removed by light pounding & winnowing. About 8-10% of the decorticated seed are still left with partial testae sticked on kernel. The kernel with testae has to be sorted out manually to get clean kernel without testae content.
