The fruit is slightly smaller compared to the Alphonso variety. In the 1930s, ruler of Junagadh state Mahabat Khan’s agri-horticulture advisor Krishnaswamy Iyengar experimented and grafted a local mango variety with several Alphonso grafts, sowing it in the red laterite soil in the foothills of Mount Girnar. The fruit that emerged had a golden saffron glow and a rich smooth pulp. Kesar is well known variety of Gujarat, particularly Junagadh region which was first selected by Gujarat and whole world. It was scientifically evaluated and named as Kesar on the basis of saffron colour of fruit pulp. The uniqueness of kesar mango is due to colour and taste of pulp which contain saffron colour. The shape & shining of kesar mango is also unique which is not shown in mango of other region. Kesar Mango has unioue golden saffron glow, a rich smooth intense flavor that tease your taste buds. It is mainly characterized by its unique gold color with geen overtones. Un-ripened mangoes have a thick green skin and firm flesh. As the fruit ripens, the skin turns yellow and soft red.The flesh softens much like a peach and. When fully ripe, Kesar Mango is sweet and succulent with slightly tart undertones.
