It is developed by changing the granular structure of native starch by physical modification and chemical reaction to convert it into cold water soluble starch. The internal structure of each granule is disrupted, allowing it to hydrate fully without cooking at any stage and has such characteristics like high soluble in cold water and strong water absorption.
