Introduction
Cassia Gum is the ground endosperm of the seed of the plant Cassia Tora / Obtusifolia and is found growing widly in India.
Processing
The endosperm halves or Cassia dehusked splits are seperated from the husk and germ using a combination of thermal and mechanical processes. The pure endosperm thus obtained is milled to produce Cassia Gum that is soluble in hot water and forms gels with carrageenan and xanthan.

Pet food: stabilizing and gelling agent
Air Fresheners: gelling agent
Textiles: print paste thickener.
