cinnamon is a spice obtained from the inner bark of several tree species from the genus cinnamomum. Cinnamon is used maninly as an aromatic condiment and flavouring additivr in wide variety of cuisines, sweet and savoury dishes, breakfast, cereals,snack foods, tea and traditional foods. The aroma and flavour of cinnamon derivefrom its essential oil and principal componenet,cinnamaldehyde, as well as numerous other constituents, including eugenol.

the flavour of cinamon is due to aromatic essential oil that makes up to 0.5 to 1% of its composition. This essential oil can be prepared by roughly pounding the bark, macerating it in sea water, and then quickly distilling the whole.
