Black Rice

Black Rice, as the name suggests, is a variety of rice which is deep black in color. It turns purplish when cooked. This color is due to the presence of high content of anthocyanin (an antioxidant present in dark fruits and vegetables like blueberries, dark grapes, purple cabbages, purple brinjals and so on) in it. In India, Manipur is the only state growing black rice where it is known as Chakhao and is consumed in Manipur and other North-Eastern states where it is considered a delicacy having traditional significance.
