This pickle is made with small, organic chillies which are deceptively power packed with sweet pungency. No bigger than half an inch at their biggest, it is said that the smaller the birds eye chilli, the hotter its bite! This pickle is made in typical northeast style with basic spices preserved in mustard oil to let the small chilies stand out. Birds eye chilli, as is with other chillies, originated from Mexico and is now cultivated in other parts the world. In India, it grows in the north-eastern region and in the southern state of Kerala. It is cultivated in most of the north-eastern states, particularly in Assam, Mizoramm and Meghalaya. The Birds Eye chilli is well known in the region for its heat level, which sort of contradicts its tiny size. However, unlike other hot chillies, this chilli is accompanied by a unique appetizing aroma and a distinct flavour. In these states, the people also enjoy it in the form of pickles. Using birds eye chilli to make a product can be challenging. It must match with the palate of our customer. And, for a diverse country like India where food habits changes from state to state.
