Baking powder is a balanced leavening agent ideally suitable for all those bakery products where fermentation is not the part of process. It is used in cakes, pastries, biscuits etc. Unlike baking soda it does not give soapy feel in the product as in case of baking powder there is no production of sodium carbonate as by-product which imparts soapy mouthfeel. so always baking powder is preferable over baking soda in food leavening.
