Blast freezing (or) air-blast freezing is among the most commonly used freezing techniques due to temperature stability and production versatility. Air blast freezers are not readily available off the shelf as packaged units. They usually have to be tailor-made to suit individual requirements. Freezing is accomplished through keep the packaged food into a freezing cabin, fans inside the freeze tunnel blow extremely cold air with high velocity around the packaged food, as a result of the extremely low air temperature exposure, the food freezes rapidly with product inner core temperature of -18 to -20degC.
