A Pickled cucumber or gherkin is a fresh cucumber that has been pickled in brine, vinegar or other solution and left to ferment for a period of time by either immersing the cucumber in an acidic solution or through souring by lacto fermentation.
Pickled gherkins are made from fresh cucumber grown in the open or protected grounds, prepared and supplied for further processing.
The technology process of the manufacturing of gherkins includes the following stages:
â�¢ Separating and washing of fresh gherkins
â�¢ Grading according to various desired sizes
â�¢ Solution making (dissolution of acetic acid, salt and other additives in purified water according to prescribed quantity.
â�¢ Packing of fresh gherkins in food grade plastic drums
â�¢ Pickling of gherkins with the solution
â�¢ Storing and checking (visual and chemical examination) of pickled gherkins.
