The fruit is used for culinary and non-culinary purposes throughout the world. It is primarily used forits juice, pulp and rind (zest) mainly in cooking and baking. Lemon is about 5% (approximately 0.3 mole per liter) citric acid, which gives a sourtaste and a pH of 2to 3.

Steps tor Dehydration
Fresh ripe lemon, with a yellow tint is collected directly from the orchards or brought as a bulk quantity in order to dry. Fresh lemon without damage is separated from it. Damaged and shapeless lemons must not be dried, it may not possessthe qualities of a good dried lemon.
The separated lemon is then washed for several times in order get rid of dirt and foreign particles. it isthen weighted and inputted manually into the drier machine. Within a time period of 25hrs the lemon will be dried. The lemon will be having a hard shiny outer skin with a deep black colour. The inner content will also be blackish in colour. The dried lemon is then collected from the drying chamber and weighted again. Weighing is repeated again because on drying the lemon loses its weight and become lighter. There is also a repetition of separation as some lemons may be damaged due to the variation in temperature and damages during the manual collection.
