    Description of Extruded Snacks Making Plant
    Cheese curls, sometimes referred to as corn curls or cheese puffs, have been a popular snack food. These crispy cheese snacks are formed from cornmeal, water, oil, and flavored coatings. Cheese curls are an extruded snack, meaning they are cooked, pressurized, and pushed out of a die that forms the particular snack shape. They are then baked (or fried, depending on the product) and flavored with oil and seasonings. Today, we eat extruded corn snacks that are irregularly shaped depending on the shape of the die. Flavorings added after baking or frying vary greatly and different brands have distinctive flavors. These snacks are extremely popular snacks with children. The cheese curl industry packages them so that they are an easy choice to drop into school lunches.

    Operating principle of Rotary head extruder

    Gelatinization of moisturized starchy ingredients takes place inside a concentric cavity between two brass plates, one rotary with 3 blades (fingers) plus grooves, and the other one with grooves only. The action of these blades on the rotating head creates the necessary condition of pressure and heat to achieve gelatinization of the raw materials at approximately 260°F (127°C). Expansion and forming of the product occurs in a narrow gap between the two plates (usually referred to as rotor and stator). Blades affixed to a circular knife support ring mounted on the outer edge of the rotor cuts to the desired size. Moisture, feed screw speed and type of brass used for the extruder heads control the expansion and texture of the product.
