The ground nuts or peanut is one of the important legume crops of tropical and semiarid tropical countries, where it provides a major source of edible oil and vegetable protein. Groundnut kernels contains 47-53% oil and 25-36% protein. India, China, Nigeria, Gambia, Senegal and USA are the major groundnut producing countries. There are two most common names used for this crop i.e. groundnut or peanut. In India the important groundnut cultivating states are Gujarat, Andhra pradesh, Tamil Nadu, Karnataka, Maharastra, Madhya Pradesh, Uttar Pradesh and Rajasthan.

 

Groundnut is the major oilseed of India. It accounts for around 25% of the total oilseed production of the country. Peanuts have many uses. They can be eaten raw, used in recipes, made into solvents and oils, medicines, textile materials, and peanut butter, as well as many other uses. Boiled peanuts are a preparation of raw, unshelled green peanuts boiled in brine and often eaten as a snack. More recently, fried peanut recipes have emerged – allowing both shell and nut to be eaten.

Two types of copra, namely the milling and the edible, are made in India. The milling copra is used to extract oil while the edible copra is consumed as a dry fruit. Edible copra is made in the forms of balls and cups. Copra contains the highest percentage of oil compared to other oil seeds. It contains 15-20 percent carbohydrates, 9 percent protein and 4.10 percent crude fi bre besides 65-68 percent fat. The carbohydrate fraction consists of a large percentage of cellulose and sucrose together with other sugars. Besides glucose and fructose the presence of galactose, raffi nose and pentoses is also reported.
