Tamarind Gum & Derivatives are derived from tamarind kernel seeds grown on tamarind tree which is indigenous crop to south india. The Tamarind fruits are in the form of large pods, 10 to 15 cm long, which contains 55% pulp, 33.9% seed and 11.1% shell and fiber. Tamarind seeds are derived from tamarind fruits which is about 1.6 cm in length and 0.7 Cm thick.
