Details :Maltodextrin Powder is produced by enzymatic hydrolysis of corn starch. Maltodextrin is a moderately sweet polysaccharide used as a food additive. It is produced from corn starch and is usually found as a creamy white hygroscopic powder. Maltodextrin is easily digestible, being absorbed as rapidly as glucose. It has a dextrose equivalent (DE) of 10-25% it provides a convenient way to replete energy reserves. Maltodextrin is a complex carbohydrate combination that provides long-lasting energy. Maltodextrin powder has a rapid rate of digestion, allowing it to supply additional calories without causing the abdominal discomfort that can be experienced with simple sugars. The body gets energy from maltodextrin gradually easily and evenly, so it is ideal for carbo loading. Maltodextrin is a white powder and is extremely bland in taste with very little sweetness. Details :Dextrins are degradation products obtained by treating starch under carefully controlled conditions. Dextrins are made by heating starch in dry form with small amounts of catalyst. Dextrins are white OR yellow powders that are partially or fully water-soluble, yielding optically active solutions of low viscosity. There are two types of Dextrins such as White Dextrin which has an appearance of the native starch and has solubility varying from 25-80%. It forms a soft, light colored gel on cooling.   • Sugar Confectionary : Liquid glucose prevents spoilage of the product without unduly increasing its sweetness. In confectionery, Liquid glucose is major ingredient of hard candies. Other important functions in sugar confectionery are to provide:
    • Texture – The ability of liquid glucose to control the crystallization process is very important to the texture and form of sugar confectionery products such as caramel fillings and toffee. In hard toffee the ability of melted sugar to create a glassy, firm structure is also utilized. To prevent crystallization in certain products, Liquid glucose is often used.
    • Flavor – Liquid glucose adds sweetness and enhances other flavors.
    • Color – Decomposition products from heating the sugar influence the color. This is particularly important in giving caramels and toffee their characteristic taste.
  • Chocolate Confectionary : Chocolate confectionery is cocoa-based products. In chocolate products, the sugar mainly affects the:
    • Taste – Liquid glucose adds sweetness and balances the slightly bitter taste of the cocoa. In milk chocolate the milk powder also adds sweetness, and consequently the sugar content is lower than in plain chocolate.

  • FABRILOSE is a modified, thin, boiling starch. It has low and uniform viscosity, which does not change much with temperature unlike native starches, which show wide variation in viscosity. The keeping qualities of the native starch also show a marked variation, i.e. considerable degradation occurs on boiling.
  • Its non-congealing characteristic, shorter boiling time, transparency of paste and lower viscosity ensure easy working, compared to thick boiling starches. Unlike gum and glues which require soaking, FABRILOSE is readily dispersed in water and can be boiled into a smooth paste without any pretreatment.
  • One of the main drawbacks of tapioca size is that it thins down very much on boiling, resulting in an uneven pick up on the high speed machine. The viscosity of FABRILOSE does not change with boiling and ensures uniform pick up of size even on modern high speed sizing machines.
  • Thin boiling starch has low and uniform viscosity, which does not change much with temperature unlike native starches which show wide variation in viscosity. Thin boiling starches are manufactured by acid addition to native starch slurry. Low viscosity enables its use in high concentrations without the viscosity getting too high. In some applications, for example in instant soups, thin without any specific technical function. Thin boiling starch non congealing characteristic, transparency of past and lower viscosity ensure easy working compared to other modified starches. Unlike gum and glues which require soaking, thin boiling starch is readily dispersed in water and can be boiled into a smooth paste without any pretreatment. Its application in yarn weaving is particularly advantageous as it does not develop abrasive points on over drying and its flexible film gives the yarn the desired elasticity.

Applications :

  • Pharmaceuticals Industry: Anhydrous Dextrose is used in intravenous injections vital for preventing dehydration.   • Dextrose 5%, 10% or 20% helps restore fluid energy equilibrium while a normal saline solution is for prompt compensation of primary water electrolyte deprivation.

Details :Dextrose Monohydrate Powder (DMH) is commercially produced by the enzymatic hydrolysis of the starch. DMH is a white free flowing crystalline powder. DMH find applications mainly in the manufacture of instant energy drinks, serves as major raw material for manufacturing of  Dextrose Anhydrous and Pharmaceuticals and Fermentation stage of manufacturing of anti-biotic. Its uses are many and varied.

 

Applications :

  • Food Applications :
    • Food Grade : Dextrose Monohydrate is purified and crystallized D-glucose. It contains one molecule of water of crystallization. It exists in white, odorless, crystalline granules having a bland and sweet taste.
    • Bakery Products : DMH has several functional purposes in yeast-raised foods, such as Bread and Buns. The primary purpose is to supply fermentable carbohydrate, on which the yeast may grow and provide CO2 for 'raising' the product. Its presence also assists in browning of the crust to give a final product that is pleasing in appearance and aroma.
    • Biscuits : DMH can partially replace sucrose in fondants and cream fillings where fine crystals are required for a smooth texture.
    • Alcoholic Beverages : DMH has high fermenting ability and can be added to low calorie beer for complete fermentation of alcohol. No carbohydrate residue remains to increase the calories in the beverages.
    • Canned Products : DMH is used in canned vegetables and fruits in some instances for controlling sweetness and preserving properties.
    • Confectionaries : DMH is used extensively for sweetening and coating, chewing gum and bubble gum. DMH improves the color and gloss of the gum coatings and its high heat of solution gives a cool texture in all gum and candy coating applications.
