Details :Maltodextrin Powder is produced by enzymatic hydrolysis of corn starch. Maltodextrin is a moderately sweet polysaccharide used as a food additive. It is produced from corn starch and is usually found as a creamy white hygroscopic powder. Maltodextrin is easily digestible, being absorbed as rapidly as glucose. It has a dextrose equivalent (DE) of 10-25% it provides a convenient way to replete energy reserves. Maltodextrin is a complex carbohydrate combination that provides long-lasting energy. Maltodextrin powder has a rapid rate of digestion, allowing it to supply additional calories without causing the abdominal discomfort that can be experienced with simple sugars. The body gets energy from maltodextrin gradually easily and evenly, so it is ideal for carbo loading. Maltodextrin is a white powder and is extremely bland in taste with very little sweetness. When made into a solution, it exhibits very high viscosity although it does not hold water in itself. Its bland taste makes it inert on other food flavors and colors.

    • Bodying Agents : Maltodextrine acts as flavoring, bodying, drying and stabilizing agent in chocolate drinks, flavor  powders, citrous and coffee powders and also improves the shelf life of the product. Details :Dextrins are degradation products obtained by treating starch under carefully controlled conditions. Dextrins are made by heating starch in dry form with small amounts of catalyst. Dextrins are white OR yellow powders that are partially or fully water-soluble, yielding optically active solutions of low viscosity. There are two types of Dextrins such as White Dextrin which has an appearance of the native starch and has solubility varying from 25-80%. It forms a soft, light colored gel on cooling. The other one is Yellow Dextrin which ranges in color from pale yellow to dark brown and has high water solubility. It is used to produce high solid concentration pastes.

 

Applications :
Adhesive Industry : One of the main ingredient in manufacturing of liquid and dry adhesive is yellow dextrin as it goes into solution instantly with a lesser quantity of water. Also, because of their greater adhesive strength and fluidity, it is widely used in the manufacture of :

Details : Corn Syrup commonly known as Liquid Glucose or glucose syrup is made from the hydrolysis of starch. It is slightly yellow to colorless, clear, thick, viscous syrup, sweet to taste. Applications :
Confectionary : Liquid glucose is used to balance the sweetness, but in some cases also to control crystallization.

  • Sugar Confectionary : Liquid glucose prevents spoilage of the product without unduly increasing its sweetness. In confectionery, Liquid glucose is major ingredient of hard candies. Other important functions in sugar confectionery are to provide:
    • Texture – The ability of liquid glucose to control the crystallization process is very important to the texture and form of sugar confectionery products such as caramel fillings and toffee. In hard toffee the ability of melted sugar to create a glassy, firm structure is also utilized. To prevent crystallization in certain products, Liquid glucose is often used.
    • Flavor – Liquid glucose adds sweetness and enhances other flavors.
    • Color – Decomposition products from heating the sugar influence the color. This is particularly important in giving caramels and toffee their characteristic taste.
  • Chocolate Confectionary : Chocolate confectionery is cocoa-based products. In chocolate products, the sugar mainly affects the:
    • Taste – Liquid glucose adds sweetness and balances the slightly bitter taste of the cocoa. In milk chocolate the milk powder also adds sweetness, and consequently the sugar content is lower than in plain chocolate.
    • Texture– Liquid glucose has an impact on the viscosity of the chocolate and thus the texture and form of the end product. Liquid Glucose, which is a mixture of equal quantities of glucose and fructose, is mainly used for chocolate fillings because it does not crystallize.
  • Ice-cream Industry : In Ice cream, Glucose syrup not only prevents sucrose crystallization but also imparts a smoother texture.
  • Bakery Industry : Commercial Bakeries do use liquid glucose for pies, cream fillings.
  • Tobacco Industry : Glucose syrup is used in the preparation of Chewing Tobacco to impart flavor and to promote desirable texture and keeping qualities. It is also used for flavoring and dressing tobacco for Cigarettes.
  • Pharmaceutical Industry : In the Pharmaceutical industry, liquid glucose is used as a base for various liquid formulations, such as tonics, elixirs, cough syrups, etc. Liquid glucose has a moderate sweetness, which is preferable to the excessive sweetness of sugar. Also, liquid glucose has the advantage of not crystallizing when stored.
  • Tanning Industry : The action of liquid glucose in Tanning gives pliability and weight to the leather. In the chrome process glucose syrup is used because of its reducing action.

Details :Oxidized Starch is obtained when Native starch is treated with a variety of oxidizing agents. As compared to native starch, Oxidized starches have shorter chain lengths. It enhances whiteness and eliminates microbiological content. Upon aging, the tendency towards retro-gradation (characteristic of most starches) is eliminated largely due to the presence of functional groups. The outstanding characteristics of oxidized starch is that the pasting results rapidly, at a lower temperature, and the starch paste exhibits a greater degree of fluidity and clarity than that of unmodified starches.

  • Food Industry :
    • Producing soft- bodied gels of high clarity, oxidized starches are the best thickener for applications requiring gels  of low rigidity. This improves adhesion in batters and breading.
    • Diluted solutions of highly oxidized starches remain clear on prolonged storage, making them suitable for clear, canned soups and transparent confectionery products.
  • Paper Industry :
    • Oxidized starch is also widely used in surface sizing for paper industry which enhances the bonding of loosely attached paper fibers and fillers.
    • Where primary surface effects are desired, the holding of the paper to a controlled degree is required. This tends to minimize the size penetration for bond paper of good erasure resistance (a fairly tough film of starch upon the surface permits easy erasing of typed letters).
