Cinnamon is high in antioxidant activity.The commercial products of cinnamon are quillings, feathering, chips, cinnamon bark oil, cinnamon leaf oil and quills. Its the dry quills that is packed in bundles for trade. Quills are scraped peel of the inner bark of the mature cinnamon shoots, joined with overlapping tubes. The inner hollow is further filled with smaller pieces of cinnamon peels which is eventually dried in sun and then in shade.
