The oil is pale yellow, having a sweetish sharp, burning taste, and a penetrating odor resembling that of the fruit. It gradually becomes darker in color.
The oil of ajwain is an almost colourless to brownish liquid with characteristic oddour and a sharp hot taste. Ajwain is called omam in the southern part of India. AJwain is cultivated in black soil particularly along the riverbank throughout India and also Iran, Egypt and Afghanistan. It is a small, erect, annual shrub with soft fine hairs.
A reed like aquatic plant about 1 meter high, with sword shape leaves and small greenish-yellow flowers. It grows on the margins of lakes and streams with the long branched rhizome immersed int he mud. The whole plant is aromatic.

Cumin or cuminum cyminum is an aromatic spice known for its unique, bitter and warm flavor. It is a small annual herb about 50 cm (20 inches) high, with deep green, narrow feathery leaves and tiny white or pink flowers, followed by small oblong seeds.

Patchouli grows well in warm to tropical climates. It thrives in hot weather but not direct sunlight. If the plant withers due to lack of watering, it will recover well and quickly after it has been watered. The seed-bearing flowers are very fragrant and bloom in late fall.
