The Green Gram or moong bean (also known as mung or golden gram) is the seed of Vigna radiata. It is one of the major pulse crop in India. It has been described as a Green gram plant is a native of India since ancient times it has been in cultivation. It is widely cultivated throughout the Asia, including India, Pakistan, Bangladesh, Sri Lanka, and Thailand. It has been introduced in comparatively recent time into East & Central Africa. the West Indies and the United States.

Green gram provide protein requirement of vegetarian population of the country. It is a protein well off, staple food. It contains about 25 percent protein, which is almost three times that of cereals. It is consumed in the form of split pulse as well as whole pulse.

Food Value Of Green Gram

The green gram forms a very nutritious article of diet.It is consumed in the form of whole dried seeds and in the form of dal prepared by splitting the seeds in a mill. The sprouted mung beans are a highly nutritious food. The beans are soakedovernight, drainedandplacedincontainersin a dark room. They are sprinkled with water every few hours and the sprouts are ready in about three days. One pound of dry beans gives six to eight pounds of sprouts. There is an amazing increase in nutrients in sprouted beans when compared to their dried embryo.

Nutrition Value

Moong bean is the seed of Vigna radiate, which is native to India. The beans are small, ovoid in shape, and green in colour. They are generally eaten either whole (with or without skins) or as bean sprouts, either in raw, soaked or boiled form. Moong beans are used to make salads, soups, curry, and other delicacies. The starch of moong beans is also extracted from them to make jellies and transparent/cellophane noodles. Green Millet Product Description

Millet is one of the oldest foods known to humans and possibly the first cereal grain to be used for domestic purposes. It is mentioned in the Bible, and was used during those times to make bread. Millet has been used in Africa and India as a staple food for thousands of years and it was grown as early as 2700 BC in China where it was the prevalent grain before rice became the dominant staple. It is documented that the plant was also grown by the lake dwellers of Switzerland during the Stone Age. Millet is superior feed for poultry, swine, fish, and livestock and, as it is being proven, for humans as well.

Millet also known as Bajra or Green Millet or Pearl Millet (Pennisetum glaucum); today is an enormously important staple cereal for both sub-Saharan Africa and parts of India; and an important forage crop in the Americas. Bajra is one of the most widely grown varieties of millet. It is grown in bulk in Africa and India. Rajasthan, Uttar Pradesh and Gujarat are the largest Bajra producing states in India.

Variety

There are many varieties of millet, but the four major types are Pearl, which comprises 40% of the world production, Foxtail, Proso, and Finger Millet. Pearl Millet produces the largest seeds and is the variety most commonly used for human consumption.

The seeds are enclosed in colored hulls, with color depending on variety, and the seed heads themselves are held above the grassy plant on a spike like panicle 6 to 14 inches long and are extremely attractive. Because of a remarkably hard, indigestible hull, this grain must be hulled before it can be used for human consumption. Hulling does not affect the nutrient value, as the germ stays intact through this process.

Nutrition Value

It is comparatively high in proteins and has a good balance of amino acids. Thus, it plays an important role in metabolism.

Due to essential nutrients such as methionine (an amino acid), B complex vitamins (niacin, thiamin, and riboflavin), folic acid, lecithin, potassium, magnesium, manganese and zinc, millets are very effective in several roles. Niacin reduces cholesterol while magnesium is essential for maintaining good heart health, as it lowers blood pressure and reduces the risk of heart attacks.

It is a better source of iron than other grains. This ensures a good count of hemoglobin, avoiding symptoms of anemia etc.

Regular intake of millets provides protection against breast cancer in pre-menopausal women.

It is a moderate source of thiamine (vitamin B1), which helps improve blood circulation and general health of the nervous system.

It is a good source of magnesium, millets act as a cofactor in a number of enzymatic reactions. Consumption of pearl millets helps in minimizing the risk of type 2 diabetes.

A wide range of wheat products are made by humans, including most famously flour, which is made from the grain itself.

Wheat, cereal grass of the genus Triticum (family Poaceae) and its edible grain, is one of the oldest and most important of the cereal crops. The wheat plant has long, slender leaves, stems that are hollow in most types of wheat plants, and heads that have many kinds of flowers, from 20 to 100. The flowers are grouped together in spikelets. Each spikelet has two to six flowers. In most spikelets, two or three of the flowers become fertilized, and this makes them produce the grains used for food.

Barley Product Description

Barley is a cereal grain, having a mild, starchy flavor and a slightly chewy texture. Pearl barley, the most popular form used for cooking, has the outer hull removed and has been polished or pearled. Barley is a whole-grain food and its consumption offers several health benefits. It is a highly soluble fiber and can reduce blood cholesterol and blood glucose levels. Barley is also low in fat. Types of barley include hulled, hulless and pearled barley. When barley is hulled, the tough inedible outer layer is removed. Still considered minimally processed, the hulled barley is a whole grain. It comes in kernels, flakes, grits and flour. Hulless barley, also known as naked barley, still has the tough outer hull loosely attached.

Barley is an important rabi crop. For human consumption. Barley seeds are widely demanded in the Indian as well as foreign market as it is used in diet to meet the nutrient requirement. it is largely consumed by the poor classes either as flour for chapatimaking, pure or mixed with wheat or gram flour, or as parched grains to make sattu. GRAINS

Grains are seeds of grasses. More particularly, the term "grains" usually refers to the cereal grains, those that are used as food or fodder by humans. Three grainsrice, wheat, and cornare the major source of calories in the human diet throughout the world, both through direct consumption or by providing animal feed. In addition, corn is a significant source of raw materials for some segments of the chemical industry.

Like other seeds of flowering plants, grain contains both the embryo and endosperm . The diploid embryo, often called the germ, contains the tissues that develop into the new individual after germination. The triploid endosperm is a rich nutritive tissue formed by the fusion of a second sperm and the two nuclei of the central cell in the embryo sac. Surrounding both endosperm and embryo is the protein - and oil-rich aleuronic layer. This layer plus several thin outer coverings and the remains of the seed coat make up the bran.

Grains are grown in greater quantities worldwide than any other type of crop and provide more food energy to the human race than any other crop. In some developing nations, cereal grains constitute practically the entire diet of common folk. In developed nations, cereal consumption is more moderate but still substantial. The word cereal derives from Ceres, the name of the Roman goddess of harvest and agriculture. Grains are traditionally called corn in the United Kingdom, though that word became specified for maize in the United States, Canada, New Zealand, and Australia.
