Ingredients2 tbsp vegetable oil2 qts garlic cloves, minced1 qt jalapeo, seeded and finely minced1 tbsp curry powder or red/green thai curry paste2 cups vegetable broth14 oz drupe plain almond milk1 cup coconut milk1 tsp salt2 tsp freshly grated ginger1 cup rice vermicelli noodles100 g tofu, cut into 1/2 inch cubes2 qts small tomatoes cut into 1 inch chunks3 tbsp fresh lime juicecup chopped fresh coriander instructionsin a heavy saucepan heat the vegetable oil over moderately low heat and cook garlic and jalapeo, stirring, for 2-3 minutes until fragrant.Add the curry powder (or paste) and cook, stirring constantly, for few seconds.Stir in the broth, add coconut milk, drupe almond milk, salt and ginger, bring mixture to a boil. Lower heat and simmer for 6-7 minutes.While the soup is simmering, place noodles in a large bowl, cover with warm water and let sit for 5 minutes. Ingredients4 cups Almond Milkcup Grapes/Kiwi Finely Choppedcup Blueberries/Plum Finely Choppedcup Orange Finely Choppedcup Strawberry/Apple Finely Chopped InstructionsTake 4 cups of almond milk and divide it in 4 parts.Put finely chopped Grapes/Kiwi in one part of Almond milk. Mix them both and puree in a small food processor until smooth. Keep the mixture aside.Take the second part of Almond milk and finely chopped blueberries/plum and grind them together and keep aside.Puree finely chopped oranges and one portion of Almond milk.Do the same with chopped apple/strawberries along with Almond milk and make a puree of both the ingredients.Put the first layer in the bottom of each Popsicle moulds. This layer can be as thick or as thin as you like. You can make identical popsicles or mix and match the order of your stripes.Put the mould in the freezer and freeze until the first layer is solid - approximately half hours.Set down your second layer, and then cover the top of the mould tightly with foil. Make a tiny slit in the centre of each opening with the tip of a sharp knife, and then slide a Popsicle stick in. Freeze again for half hours.After the second layer is frozen and your sticks are set, you can remove the foil. Ingredients10 g Corn flour4 qts (cloves) Crushed garlic2 tbsp Almond buttterChilly flakesSalt to tasteWhite pepperFresh parsley4 cups Almond milk2 cups Pasta InstructionsCooking on simmerSauce: Roast corn flour in a small saucepan without oil, don't let it turn brown. Add almond butter, wait a few minutes add crushed garlic and mix the cornflour. Gradually start pouring alond milk over it and stir contiously. Add white pepper, salt to taste, chillie flakes and add the boiled pasta, mix it well and garnish with parsley and serve hot.Pasta: Boil Water and add salt generously in the boiling water with 1 tbsp of olive oil, then add pasta. keep checking with a fork if the pasta is done. Do not overcook. Trick is to drain the water once the pasta is almost done. Do not wash the pasta after draining the water.
