Turmeric

  • Type Raw spices and Oil
Turmeric grows wild in the forests of South and Southeast Asia. It is one of the key ingredients in many Asian dishes. Indian traditional medicine, called Siddha, has recommended turmeric for medicine. Its use as a coloring agent is not of primary value in South Asian cuisine. Turmeric is mostly used in savory dishes, but is used in some sweet dishes, such as the cake sfouf. In India, turmeric plant leaf is used to prepare special sweet dishes, patoleo, by layering rice flour and coconut-jaggery mixture on the leaf, then closing and steaming it in a special copper steamer (goa). In recipes outside South Asia, turmeric is sometimes used as an agent to impart a rich, custard-like yellow color. It is used in canned beverages, baked products, dairy products, ice cream, yogurt, yellow cakes, orange juice, biscuits, popcorn color, cereals, sauces, gelatins, etc. It is a significant ingredient in most commercial curry powders.

Cinnamon Stick

  • Type Raw spices and Oil
Cinnamon bark is used as a spice. It is principally employed in cookery as a condiment and flavouring material. It is used in the preparation of chocolate, especially in mexico, which is the main importer of cinnamon.[35] it is also used in many dessert recipes, such as apple pie, doughnuts, and cinnamon buns, as well as spicy candies, coffee, tea, hot cocoa, and liqueurs. In the middle east, cinnamon is often used in savoury dishes of chicken and lamb. In the united states, cinnamon and sugar are often used to flavour cereals, bread-based dishes, such as toast, and fruits, especially apples; a cinnamon-sugar mixture is even sold separately for such purposes. It is also used in turkish cuisine for both sweet and savoury dishes. Cinnamon can also be used in pickling. Cinnamon powder has long been an important spice in enhancing the flavour of persian cuisine, used in a variety of thick soups, drinks, and sweets.Cinnamon is a popular flavouring in numerous alcoholic beverages.[37] fireball cinnamon whisky is a good example. There are many similar products throughout the world. Cinnamon brandy concoctions, called "cinnamon liqueur" and made with distilled alcohol, are popular in parts of greece. In europe, popular examples of such beverages are maiwein (white wine with woodruff) and ubrwka (vodka flavoured with bison grass).

Nutmeg

  • Type Raw spices and Oil
Nutmeg and mace have similar sensory qualities, with nutmeg having a slightly sweeter and mace a more delicate flavour. Mace is often preferred in light dishes for the bright orange, saffron-like hue it imparts. Nutmeg is used for flavouring many dishes, usually in ground or grated form, and is best grated fresh in a nutmeg grater.Indonesian manisan pala (nutmeg sweets) In Indonesian cuisine, nutmeg is used in various dishes, [2] mainly in many spicy soups, such as some variant of soto, konro, [3] oxtail soup, sup iga (ribs soup), bakso and sup kambing. It is also used in gravy for meat dishes, such as semur stew, ribs with tomato, to European derived dishes such as bistik (steak), rolade (minced meat roll) and bistik lidah (tongue steak).[4] Sliced nutmeg fruit flesh could be made as manisan (sweets), either wet, which is seasoned in sugary syrup liquid, or dry coated with sugar. In Penang cuisine, dried, shredded nutmeg rind with sugar coating is used as toppings on the uniquely Penang ais kacang. Nutmeg rind is also blended (creating a fresh, green, tangy taste and white colour juice) or boiled (resulting in a much sweeter and brown juice) to make iced nutmeg juice.
