• Guar gum, also called guaran, is a galactomannan.
• It contains 36.6%D-galactopyronosyl units and 63.4%D-mannopyranosyl units.
• The ratio of D-mannopyranosyl to Dgalactopyranosyl units is about 1.8:1.
