Fenugreek Seeds are small about 5 mm. long, hard, and brownish yellow although the color varies. The seeds are hard, yellowish brown and angular. Some are oblong, some rhombic, other virtually cubic, with a side of about 3mm (1/8"). A deep furrow all but splits them in two. They are available whole and dried, or as a dull yellow powder, ground from the roasted seeds.

Black cardamom has a fresh and aromatic aroma which is complex in nature. It can be described as slightly sweet, floral and spice having citric elements. Large black cardamom (badi elaichi) has a strong, unique taste with an intensely aromatic fragrance. Large Cardamom is best stored in pod form because once the seeds are exposed or grounded they quickly lose their flavour. The nutmeg seed is encased in a mottled yellow, edible fruit, the approximate size and shape of a small peach. The fruit splits in half to reveal a net-like, bright red covering over the seed. This is the aril which is collected, dried and sold as mace. Under the aril is a dark shiny nut-like pit, and inside that is the oval shaped seed which is the nutmeg. Nutmegs are usually sold without the mace or hard shell.
